My nesting seems to involve making sure we have food after Jellybean arrives. I previously talked about canning tomatoes and apples, and my adventures have continued!
This past three day weekend I added to the freezer and pantry!
Eight crock pot meals of the chicken variety. I used this pin/blog post from Pinterest for those interested.
I turned some beef neck bones into rich beef broth (frozen in freezer safe ball jars) and there was even enough beef bits for two BBQ sandwiches!
Then I turned these pots into 9 more pints of tomato sauce. And not pictured was four pans of beef and three cheese lasagna! I used my own recipe but everything is fully cooked and so we just have to thaw and bring back up to temp! Easy peasy and yummy for our post baby fog!!
That brings my count to nine casseroles, eight crock pot meals, and more cans of apple sauce and tomato sauce than I can count right now. Pardon me while I rest on my laurels and put my feet up.
I’m interested….does anyone else out there prep for busy times by filling the freezer?

I LOVE the idea of “ready to cook” meals prepped in advance! I’m so going to have to try that! 🙂
Oh that’s so smart. What a good idea when preparing to have a baby. You should have a frozen potluck baby shower where people bring you frozen meals to eat later.
I totally would. But most of my friends aren’t “foodies” and it could be scary as to what they would bring!!
Hmm. Maybe those who don’t cook could go for store bought freezer items.

I made an extra batch of macaroni and cheese last week and then froze it in muffin pans (once it’s frozen, pop them out and put them in a ziplock bag) so that lunch for kids would be easier this week. I’m hoping to make some sweet potato quesadillas today for the same reason.
Oh yes, the meals sound delicious and you will be so glad you made them. As a Nana I make meals for when the grandchildren come so I have plenty of time to play.
Aren’t you clever to get that all ready to go ahead of time! I do other things to prep for busy times, but somehow I never thing of freezing meals. My freezer’s pretty neglected, actually.
Wow–such planning! I am only cooking for two, so I will make a full recipe of chili on a slow day. Half of it gets frozen and saves us on a busy night!
