Beer N Cheese Bread

My Beer N Cheese bread came out gorgeous!

My recipe came from my favorite bread book, The Bread Lovers Bread Machine Cookbook. I chose to use Copperhead Pale Ale from Free State Beer. This is a locally brewed Kansas pale ale beer. However, I mostly chose this beer because it was the last of the sample box I purchased and I didn’t want to drink it. It had been staring at me forlornly from the fridge…

Therein lies my mistake. This bread raised and baked beautifully. It was tender and moist on the inside and a nice toothy crust on the outside. I was terribly excited to slice it up. But my hopes were crushed, I just didn’t like how it tasted!! The reason I didn’t like the beer was because it had a bitter bite to it. And this came through in the bread. Lesson learned: don’t cook with a wine or beer that you wouldn’t otherwise drink!!

Don’t get me wrong, Free State has awesome beer and I especially love their wheat beer! I highly recommend this Lawrence, KS brewery and restaurant. It’s just that the Copperhead isn’t for me.

This bread is okay with either lots of butter or jam. But I feel that this batch is destined for the community kitchen at work. This is my way of “frogging” my baked goods, lol! Next time I will use a tastier beer that I enjoy!!

Sunday Is For Beef

Today has been a very lazy day. The husband and I did a little shopping, a little cleaning, and a little (lot) football watching.

But the best part was cooking up some of the home grown Kansas grain fed beef that we picked up from the processor this past Friday! We selected a nice marbled price of sirloin steak….

We paired our meat selection with some home grown frozen sweet corn, crescent rolls with homemade jam, steamed rice, and black beans.

I selected a nice white table wine in lemon-lime flavor from my friends at Prairie Fire Winery. It tasted like a really delicate margarita! Bob and Julie are two of the most talented people I had the pleasure of meeting during my MBA program. Feel free to check out their winery and tell them I sent you!

Yours truly (seated in the green tee) helped plant almost 600 vines earlier this spring. It was awesome, however my back hurt for a week!!

In honor if Sunday Night Football I have some Beer n Cheese Bread in the machine. Stay tuned tomorrow to find out how it turns out! I am also on my 7th scarf for the weekend. They are great tv knitting but I’m ready for something else, lol.

The Only Thing Better Than Bread Is…..

…..bacon!

I turned my fresh applesauce bread into French toast for supper! And what is French toast without eggs and bacon? Nay I say…we must always have bacon! The bread texture was amazing and fried up really well. I sliced the bread fairly thin so that it would cook evenly and completely. I even added some cinnamon and vanilla to the egg/milk mixture for an extra zip! Who says toast has to be boring!?

I may have to do a few extra minutes at the gym this week but it will be worth every decadent extra calorie!

Now the wind is howling outside and I have a sweet puppy dog on my lap (no doubt because I smell like bacon). A little knitting and conversation with make this a wonderful evening!

Nothing Beats the Smell of Baking Bread

My mother is an AMAZING baker, for almost 15 years she churned out homemade buns, biscuits, rolls, crust, and everything in between. All done daily in the local elementary school kitchen for hundreds of hungry tummies. She can make anything from scratch and her cinnamon rolls and pretzels are particularly amazing. This being said I have inherited her taste for fine homemade goods……just not the patience to do it by hand.

Two Christmas’s ago I received a bread machine and last Christmas I got the most wonderful cookbook to go with it, The Bread Lover’s Bread Machine Cookbook. This book is jam packed with 300+ recipes for both bread in and out of my machine. It’s literally to die for! So thanks to this wonderful book I bring you today, Applesauce Bread!

It’s sooooo easy to cook in the bread machine. Step one: add all wet ingredients to bottom of the pan.

Step two: mix all dry ingredients together (except yeast) and pour over wet ingredients.

Step three: add yeast on top of dry goods.

Step four: punch in the machine settings for you bread type, hit start, and walk away!

The machine does all the mixing, kneading, proofing, and baking! Three hours later you get this….

This bread turned out golden and perfect. It has a nice dense texture perfect for toast and a lovely hint of apple pie flavor. This recipe gets a star in my copy of the book to definitely use again!

I packed some for breakfast today along with some of my homemade jam and it was beyond delicious for breakfast on this cool autumn morning!

The machine lets me be my mothers’ daughter, just in my own way! I love the way my house smells because of baking bread, and this way I still get to knit at the same time!

Rainy Saturday Indulgences

It’s rainy day here in Kansas, a much needed rain I might add!

To me this means couch time with my knitting and puppies, listening to thunder, and delicious rainy day food. I picked up a new crock pot recipe on Pinterest the other day, Beef and Broccoli.

I made a few changes to recipe:

– I doubled all the liquids and the broccoli but not the beef.
– I used stew beef because that is what I have in the freezer.
– I thickened my liquid but not to the point of sauce or glaze.
– I used low sodium soy sauce to cut down on the salt.

So in my version it’s more of beef and broccoli soup but it’s still delish! Soup just felt right today. Husband thought it was a little sweet but he still loved it!

We poured the beef and broccoli over steamed brown rice and paired it with a mixed green salad and cottage cheese for a heavenly warm, filling, and nutritious lunch. This is another Pinterest find that’s going to stay in our permanent kitchen files!

In knitting news, I finally cast off my Stockinette Shrug! I gave it a nice bath in Soak and blocked it out to dry on our guest bed. Should be able to seam it up tomorrow after its dry tomorrow! For now I’m going to cast on some matching boot cuffs for my sweater.

WIP Wednesday: crock pot honey chicken

One of my favorite foods to eat is Chinese take out. My husband and I lived off of Chinese take out on the weekends in college. Honey chicken has always been a personal fav for me. And thanks to Pinterest I stumbled across a recipe for honey chicken in the crock pot! My favorite dish made in my favorite cooking device….yes please!!

I love love love my crock pot. It cooks our dinner while we are at work. It makes the house smell heavenly. And most of the time it’s pretty healthy eating.

Crock Pot Honey Sesame Chicken is absolutely delish!

While this recipe is currently in my crock pot, I actually made this for the first time Sunday. I made a few small adjustments to the recipe for my household needs:
1) omitted the red pepper flakes and added paprika. The husband can’t tolerate cayenne or red pepper flake.
2) omitted the sesame seeds just because I didn’t have any on hand.
3) I stirred the pot several times just because I was worried about the honey burning to the sides.
4) the prescribed amount of cornstarch and water didn’t get it thick enough for me and I ran out of cornstarch…. So I made a quick roux (flour cooked into melted butter) It turned my sauce a little cloudy but at least it got to a sauce like consistency.

Even with my changes this dish was heavenly over some steamed brown rice. It was very very sweet. I might hit the finished sauce with some sort of acidity like citrus this time to cut the sweetness a bit since I do not put the heat in it (omitting the pepper flake) as the recipe calls for. But this is definitely a recipe that will make a regular appearance in my kitchen!

Fall in Kansas = Homemade Jam

I grew up in the sticks…..like waaaaay out in the middle of nowhere Kansas. My family hunted, fished, and gardened all passed down through several generations. For as long back I can remember we have canned tomatoes, froze vegetables, froze meat, and preserved jam. As a child I didn’t see the point but as I have gotten older (presumably wiser) I find that I have the desire to do all those things that I used to think were dumb.

I just bought 1/2 a prime Kansas side of beef from a local rancher friend. This means our freezer will be FULL of beef for the year. I love locally grown Kansas grain fed beef (drool). However, I had some fruit I harvested from my grandparents trees, vines, bushes, etc in the freezer that needed to be worked up to make room. So I decided to can some jam!

A short trip to Walmart for sone essentials and I was ready to go! I had the fruit for and wanted to make sour cherry, mixed red/black raspberry, and mixed berry. My grandmother always used Sure Jell and got great results. So that’s what I use. It’s great because the recipe inside usually only calls for fruit, sugar, and pectin. I follow the instructions inside the box in case any one is wanting my recipe, lol.

I love cooking and watching the food transform, especially with home grown hand picked produce! Downside to this process, I only have one large burner on my stove so I had to do a lot of pot and pan swapping and shuffling!

I cooked the fruit in the large burner and sterilized my jars in my canning pot on the small burner. (And drinking a coke to keep my energy up). When the jam was fully cooked I poured into the jars on the counter while moving the canning pot to the big burner to bring it to boil so I could seal the jars. And then switching back again to start the next batch.

On a side note, I don’t like big chunks of fruit so I run it through a food processor to make smooth before I cook it. I like the nutrition (ha, that is before the multiple cups of sugar added of course) and flavor of the whole fruit, just not the chunky texture.

After four hours of processing, cooking, switching, and shuffling I had seven batches of jam that made the equivalent of 41 half pints of jam!

My notes on this project:

– I had waaaay more fruit than I thought and now I have waaaay more jam than I can eat! Undoubtedly some of this will end up as Christmas presents 🙂

– I was not as exact as I should have been on my measurements as I should have been. Therefore some of my jam batches set “harder” or thicker than others. Oh well, it still tastes good!

– Having only one larger burner slowed this process down way to far. Argh….

– Some of my jars didn’t seal right away after canning and I freaked. If they don’t seal you have to freeze them and they don’t have as long if a shelf life. Turned out I panicked early because by morning when they were completely cool, they all sealed! Thank heavens 🙂

Mostly I found that I enjoy working with food and my own two hands. Probably why I also like knitting because I create things with my hands. While I spent hours in the hot kitchen I still had a good time and have goods to show for my effort!

Saturday mornings

I drag my butt outta bed every Saturday morning to the most amazing and punishing workout.

Afterwards, I’M STARVING! Even when I eat before, sigh. Today my hunger inspired me to make an impromptu brunch snack….Cinnamon Chocolate Whole Wheat French Toast!

Ingredients:
1 large egg
1 tsp sugar or sugar substitute
1/2 tsp cinnamon
2 tsp protein powder (I used chocolate whey powder from Kroger)
Splash of slim milk
1 whole wheat hot dog bun (or whatever whole wheat bun or bread you have, I only had hot dog buns lol)
Sugar free syrup

Whisk together egg, sugar, cinnamon, protein powder, and milk. Mix well to dissolve powder! Dip bread into mix and cook in skillet on medium heat. Cook both sides and serve with your choice of syrup!!

Quick and easy whole grain high protein snack!! Sorry for the photo…my toast “caramelized” a bit too much, but trust me it’s delicious!!!!

Never Cook Angry

Never cook while angry….

Sigh, I had a bad day at my big kid job. I love my big kid job but it’s frustrating at times. (I’m an accountant by trade). I felt the need to make comfort food with my own two hands.

After getting off work I swung by the grocery store with a list of ingredients I needed for some new recipes on Pinterest I was going to try. Mistake number one: going to the store at peak times. Took me forever to get in and get out. I told myself it would ok if I could just get home.

Mistake number two: not reading the Pinterest recipes very clearly. I unpacked my wares and set upon cooking only to find I didn’t have everything I needed. I was upset but I kept cooking.

On the docket:
Sweet Potato Soup
– Betty Crocker Banana bread
Chicken Bacon Ranch pasta
– garlic toast

Soup came along swimmingly and before I knew it, it was done and cooling in containers on the counter for my work lunches this week.

The banana bread came together well but I couldn’t get it out of the pan. Not to mention I burnt the bottom. I really started to get pissed at this point.

Finally onto tonight’s dinner….chicken bacon ranch pasta! Bacon cooked up superbly and the wonderful smell almost pulled me out of my funk. However the creamy ranch pasta sauce wouldn’t thicken and I had to use cornstarch to thicken 😦

I had just enough spaghetti for the recipe. In the process of straining the fully cooked pasta I burnt my finger on the pan and dropped half of the pasta on the floor. I let out a shriek and my husband came running to see me surrounded by pasta STUCK TO EVERYTHING! (Even me) Due to the chaos I forgot I had bread in the oven toasting and it preceded to burn until my husband smelled smoke.

It was at this point I gave up and opened a beer. We salvaged enough pasta for dinner and scraped the burnt parts off the toast.

I realized my bad juju or negative energy had transferred into to food. Everything tasted find but not as relaxing as I intended, sigh. Take my advice…..don’t cook angry!

Tomorrow is a new day!
