Smothered Steak n Rice

The hubs and I have been on the road A LOT lately. This had led to eating a lot of junk and a poorly stocked kitchen at home. This week I have been absolutely craving vegetables and good home cooked food. But alas, when opening my pantry I didn’t have a lot to work with. I did manage to find:

– tenderized beef minute steak (frozen)
– cream of mushroom soup
– brown gravy mix
– half a bag of long grain white rice
– some beef stock
– frozen bag of green beans

And dinner was born! I mixed two cans of the cream of mushroom soup with the gravy mix powder and a little fresh ground black pepper and salt. I pulled out my thawed steaks and pounded them out extra thin and laid them in a lightly greased 9×13 baking dish. I poured the soup combo over the meat and slid into a 350 degree oven to bake.

I put the rice in my steamer and used the stock instead of water to infuse flavor. Kinda came out looking like brown rice!?

20130206-083056.jpg

The meat was done in about the same time as the rice (not sure exactly how long, sorry!) I served the meat and sauce over the rice and added steamed green beans for a complete dinner. All in all this cook/prep time took less than 40 minutes!

It was hearty and satisfying and according to my rough calculations, under 400 calories for the whole meal! I even got a thumbs up from my hubby! Not mention I made dinner without going to the store or drive through lane! The dogs were disappointed I didn’t spill…and they keep really good watch!

Eating Better (or at least trying to)

Between my full time job and the husband working full time AND going back to school, we aren’t home much at night. But our waistlines shouldn’t suffer. So I have a plan!

Cook ahead Sundays! I spend a few hours in the kitchen on Sunday and fill the fridge for the week. This week we have Baked Beef N Macaroni and Spicy Salsa Chicken.

First the beef! I browned 2 lbs of lean ground beef with one large white onion. Drained and put in large bowl. Cook 1/2 of large box of macaroni noodles to al dente and drain. Add to beef. I then mixed in an extra large container of spaghetti sauce and 1 cup mozzerella. Stir to combine and pour into 9×13 pan. I then topped with 2 more cups of shredded mozzerella. Threw in the oven at 350 to bake for 15 minutes (or until cheese is baked and the whole thing bubbles)!

20130121-192801.jpg

Now the Spicy Salsa Chicken! I steamed 1 1/2 cups white rice with 3 cups water. After the rice was done and tender I transferred to a large mixing bowl. I added one can of green beans, one can of sliced carrots, large can of chicken breast pieces, and finally 2-3 cups of homemade salsa. Stir to combine and pour into 9×13 pan. Bake at 350 for 15 minutes (or until casserole is bubbly and cheese is melted)!

This way we have home cooked meals to pack into our lunches AND ready to heat meals when we finally get home. Nice big pans of yumminess that keep us out of the drive thru lanes. Our favorite this week was definitely the salsa chicken! (I mixed in a little sliced fresh avocado to mine and it was to die for!)

It’s takes some time and I dirty a lot of dishes, but it’s totally worth it. Here’s hoping to win the battle of the bulge!

Adventures in Ice Skating

Saturday was an amazing day! We spent the afternoon with friends at a baby shower/housewarming. I presented the Momma-to-be with her own One Row Blanket in sage green. She was delighted! I also threw in a baseball cacoon/snuggly of my own design and improvisation as she is having a boy and Daddy-to-be has high hopes for his athletic future. We all used to live in the same town but they moved early last year so we can’t see each other very often.  It was amazing to spend time with some great friends. I can’t wait until we get to meet their son! I hope to be able to share some snaps of the baby wrapped up in hand knits in a few weeks.

On the drive back to town my husband told me he had a surprise for me since it was our first weekend together after he started his new job. But he wouldn’t tell me or give me any hints…argh. So when we got home we ate an amazing grilled chicken dinner and watched a movie. I was thrilled and delighted to have such a sweet date night. But it wasn’t over…at 9:30 my husband brought me my shoes and coat and said ‘let’s go’!

He took me ice skating for the first time ever in my life!! Our town has a local semi-pro hockey team and after the home games they let you free skate for just a few bucks. While it gets cold in Kansas, it never gets cold enough long enough to freeze any lakes or rivers. And I grew up in the boonies so we didn’t exactly have access to ice rinks. IT WAS AMAZING and it really wasn’t that much different than roller skating. A few turns around the rink and I was hooked! Not to mention its a GREAT workout and my ankles/legs/behind are sore this morning to prove it!! It was such a great feeling to fly across the ice next to my husband. It will definitely be included in our regular date night options. Sorry no photos as I was deathly afraid of flying across the ice and crashing thereby smashing my phone. But trust me it’s cool!

But you know I found myself doing? I kept noticing all the hand knits that everyone was wearing. It was fairly frosty in the rink. Scarves, hat, beanies, cowls, sweaters, boot toppers, ear warmers…..so much delicious yarn everywhere. I couldn’t help but think….”I could make that!” “Oh that’s pretty!” So much yarn worn by people of all walks of life, ages, and styles. There was boho-chic, chunky knits, downtown hipster, crazy novelty yarn, and just down right warm and snuggly amazing-ness. It’s crazy how many knits you can find when you start looking. I’m beginning to think I have problem when I can spot a hand knit from half a block away.

On top of all this, I made great progress on my Chevron Blanket during all the car travel time and movie time. FO object post coming soon!!!!

Happy Knitting!

Something For My Husband

I never knit for my husband. He proclaims yarn to be “too scratchy”. I’ll pause for the gasps of horror…..

He grew up with those horrible acrylic afghans that everyone had in those awful colors. Never fear yarn devotees! I’m working on converting him, I thought I’d start small and make something cute/fun. In the last year he has fallen in love with Dr. Who the British television show. I saw a blog by Knittyfordrwho where the author, Lorenia Lemas, posted a pattern for a tardis washcloth. I had some bright blue Cottontots Solids in Little Boy Blue, so off I went!

The pattern was easy and fast! I knit the whole thing up watching two TV episodes. The pattern only uses knit and purl and practically flies off the needles. Interesting enough to keep my attention but not complicated enough that I couldnt watch TV. It was a nice break from my Chevron Blanket and the never ending garter stitch. I even used yarn from my stash! Finished project was pretty smart looking if I do say myself.

Upon presenting it to my husband he immediately snapped a photo and sent it to his Dr Who buddies. I think I picked up a few cool wife points and got him to dip his toe into the yarn pool!

Happy Knitting!

Animal Antics

My latest knitting craze coupled with my husbands new job has left the pups in our house very put out. Neither of us is home during the day and it gets dark early here in Kansas. We haven’t even been able to get to our park runs very regularly either. I think they have cabin fever….

20130106-165607.jpg

Dex has been pulling out ALL his toys and blankets and leaving them EVERY WHERE. Let me tell you it’s a joy to find the sharp edge of a nylon chew bone on the way to the bathroom with your bare foot at 3 am. I can’t blame the poor pup for being cooped up this winter, but he’s wearing on my nerves!

Good thing he’s cute otherwise he’d be in trouble! I wish everyone a very happy Friday! Don’t forget to have a little fun, TGIF! The pups and I are going to have a long walk and then a dog biscuit scavenger hunt in the house!!

Family Photos

The Mathews household was short on funds this year for the holiday season so we decided to take an alternative approach. A dear friend of mine is an amazing photographer and he agreed to help us out. So on a very cold October day we tromped around a local park to take a few photos. There was a wedding in the same park and at least two photography clubs running around. The dogs were so wound up by all this activity that they were spectacularly uncooperative. We managed to at least get two good family shots, which were then turned into Christmas cards and framed photos for Christmas gifts.

Not so bad right? The family really loved them as gifts and it was nice to give gifts from the heart (and save a little money)!

We had few minutes of good light left and so I had the photographer snap a few new head shots for my work/linkedin profile/facebook/etc. I haven’t had a head shot taken since I was 18 years old, lol.

Now I’m off to some knitting and cleaning. I am attending my first meeting of a local crochet/knitting guild and I want to choose some items to donate to their knitting for charity baskets! I’ll let you know how it goes tomorrow afternoon!

Happy Knitting!!!

Scandinavian Rice Pudding and The New Year

One of my favorite holiday dishes is something my family simply calls “rice”. It’s simple rice pudding with four ingredients:
– white rice
– milk
– sugar
– cinnamon
(Raisins if you are so bold, I am not!)

Scandinavian tradition holds that families make this rice on the new year and if the rice is thick the new year will be blessed. If the rice turns thin then gird your loins for a rough year. I didn’t get to spend New Years with my family so I made a batch of rice to make myself feel better.

Step one: steamed white rice in my rice cooker.

20130101-113233.jpg

Step two: add milk and sugar (I don’t measure, just use my best judgment and taste until its delicious!)

20130101-113323.jpg

Step three: simmer until thick and wonderful

20130101-113356.jpg

Step four: serve warm with cinnamon and sugar sprinkled on top and a cup of cold milk for dipping (not pictured)

20130101-113457.jpg

There are a thousand ways to make this dish, just google it and you’ll see what I mean! And it varies from country to country and family to family. I just wanted to give you a peak into mine. It’s a simple dish and not terribly fancy but on a cold snowy winter day…..it makes me feel closer to my family and heritage. Plus, my rice was thick and creamy so I’m looking forward to a good year!

I’m off to enjoy the snow! Happy New Year to all!!!!

Good News!

The husband has a new job!!!!!!

Sorry for the delay in the rest of my Scandinavian Christmas posts, but my hubby got the best Christmas present ever! I still vow to get them out 🙂

We found out the day after Christmas and have been running around like chickens with our heads cut off since, rounding up paperwork, negotiating benefits, changing class schedules, etc. This new job is in IT AND will let him continue to work on his Computer Information Systems degree.

After 8 1/2 months of looking in this terrible economy we both are very excited. I will be sad to lose my housekeeper, crock pot stirrer, and doggy day care that would do wonderful things while I was at work. But the paycheck will be worth catching up on bills!

May your New Year be wonderful! (I’ll be working a 12+ hour day at my big kid accounting job to close out the year…..)

Christmas Eve Shinglebread

Growing up Swedish/Norwegian means shinglebread at christmas! It’s a lovely Scandinavian potato tortilla of sorts. For as long as I remember this has been a sugary Christmas treat.

Start with a flat piece and drizzle with Caro syrup….

Then you roll it up and eat up!

This dish means family and Christmas and memories of childhood! I am a happy Swede tonight. Now for a little cuddle time in front of the fire before 11pm services out the local Lutheran church!

Merry Christmas to all!!
